🍪 Gluten-Free Chickpea Blondies

Looking for a delicious, guilt-free treat? These chickpea blondies are soft, chewy, and packed with fibre and protein—perfect for a snack or healthy dessert. Bonus: they’re gluten-free and can easily be made vegan!


Ingredients

  • 1 can (242 g) chickpeas, rinsed and drained

  • 85 g nut butter (almond, peanut, or your favourite)

  • 160 g maple syrup or honey (use maple syrup for a vegan version)

  • 2 tsp vanilla extract

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • Optional:

    • 2 eggs (for a cakier texture—omit for vegan version)

    • Chocolate chips for added sweetness and crunch


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend all ingredients (except chocolate chips) in a high-speed blender or food processor until smooth.
  3. Stir in chocolate chips, if using.
  4. Pour the batter into a greased or parchment-lined 8×8″ baking dish.
  5. Bake for 30–35 minutes, or until the top is golden and a toothpick comes out clean.
  6. Cool completely before slicing. Enjoy!
