Ingredients

  • 2 cups almonds
  • 1 cup finely shredded unsweetened coconut
  • 1 cups fresh dates dates, pitted
  • 4 oz chopped fresh ripe peach
  • 1 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

For coating:

  • ΒΌ cup finely chopped almonds

Directions

  1. Add all the ingredients to a food processor and pulse until you get a soft dough.
  2. Roll the dough into 40 balls (about 1 tablespoon each).
  3. Roll in chopped almonds.
  4. Keep in an airtight container in the refrigerator.
