Ingredients:
- 2 cups almond flour
- 2 ½ tbsp coconut flour
- 1 ½ tsp baking soda
- 3 eggs
- 2 tbsp almond milk
- 1/4 cup honey
- 2 small ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 1 lemon, zested
- 1 cup fresh blueberries
Directions
- Preheat the oven to
350°F.
- Line an 8×4 inch loaf
pan with parchment paper and set aside.
- In a bowl, combine the
almond flour, coconut flour and baking soda. Set aside.
- In another bowl
combine the eggs, almond milk, honey, coconut oil, mashed bananas and lemon
zest.
- Pour the wet mixture
into the dry and stir to combine.
- Gently fold in the
fresh blueberries.
- Pour the batter into
the prepared loaf pan.
- Bake for 25 minutes
until the top is golden brown, then tent with foil and bake for another 25-35
minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven
and allow to cool completely before cutting.
