Ingredients:

  • 2 cups almond flour
  • 2 ½ tbsp coconut flour
  • 1 ½ tsp baking soda
  • 3 eggs
  • 2 tbsp almond milk
  • 1/4 cup honey
  • 2 small ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1 lemon, zested
  • 1 cup fresh blueberries

Directions

  1. Preheat the oven to 350°F.
  2. Line an 8×4 inch loaf pan with parchment paper and set aside.
  3. In a bowl, combine the almond flour, coconut flour and baking soda. Set aside.
  4. In another bowl combine the eggs, almond milk, honey, coconut oil, mashed bananas and lemon zest.
  5. Pour the wet mixture into the dry and stir to combine.
  6. Gently fold in the fresh blueberries.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 25 minutes until the top is golden brown, then tent with foil and bake for another 25-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and allow to cool completely before cutting.
