Makes 8 Servings

2 cups (120g) Unsweetened Flaked Coconut

1 Cup (90 g) Sliced Almonds

1/3 Cup (50 g) Chia Seeds

½ Cup (70 g) Hemp Seeds

1 T. (8 g) Ground Cinnamon or Vanilla Powder

Pinch Salt

¼ Cup (20 F) Unsweetened Cacao Powder

¼ Cup (55 g) Virgin Coconut Oil, Melted

Optional: 2 to 4 T. (20 – 40 g) Erythritol or Swerve or 5 to 15 drops of liquid Stevia Extract

Preheat oven to 300°F (150°C).  Place all ingredients in a mixing bowl and combine well. (If using Stevia, mix it with the melted coconut oil before combining with the remaining ingredients.)  Spread the mixture on a baking tray and transfer to the oven.  Bake for 10 Minutes, mixing the cereal halfway through.  Remove from the oven and let the cereal cool down for a few minutes.  Once it’s completely cool, transfer to a jar or airtight container. Store at room temperature for up to 1 month.  Serve with Coconut Milk, Almond Milk or Full Fat Yogurt.

* If you can’t eat nuts, try Sunflower or Pumpkin Seeds instead of Almonds or switch up the nuts to pecans, walnuts or whatever you prefer.
