Kale has become a popular super food! It is full of good nutrients such as calcium, vitamin K, vitamin C, selenium (more than spinach), vitamin E and beta-carotene.  Many people add it to salads but another way to enjoy this amazing green vegetable is by making kale chips.

Kale chips are so easy to make and they are tasty too.  You can have it on its own or dip in a healthy dip of your choice.

Ingredients:

  • 2 small bunches green and purple kale
  • ½ cup of coconut oil
  • 1/8 tsp sea salt
  • Few dashes pepper

Directions:

  • Preheat oven to 300 degrees
  • Rinse kale and break away from stem into mouth size pieces
  • Dry well and place on a cookie sheet.
  • Mix salt and pepper into oil and toss kale in oil rubbing all the leaves well.
  • Bake for 15 minutes in oven tossing kale at least once so they do not burn.

You may also add some cayenne pepper over the kale on the cookie sheet to make it a bit spicy.  Make it your own… how about adding dill, fennel or garlic powder!  Just remember that cooking it slowly (15 minutes instead of 7) at a lower temperature (300 rather than 350) is best in preserving the nutrients and still getting that crispy texture.
